Preheat the oven to 350°F (175°C) and grease a 9x5-inch loaf pan.

In a mixing bowl, mash the ripe bananas with a fork.

Add the coconut oil, maple syrup, and vanilla extract to the mashed bananas. Mix well.

In a separate bowl, whisk together the gluten-free flour, baking powder, baking soda, cinnamon, and salt.

Combine the wet ingredients with the dry ingredients and mix until just combined.

Fold in the chopped walnuts.
