Rinse the wheat berries under cold water. In a pot, bring 3 cups of water to a boil. Add the wheat berries and simmer for 45 minutes or until tender. Drain and let cool.

In a large bowl, combine the cooked wheat berries, cucumber, cherry tomatoes, red onion, parsley, and mint.

In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper. Pour the dressing over the salad and toss to combine.

Let the salad rest for 10 minutes to allow the flavors to meld. Serve chilled.
