  1. Rinse and drain the black eyed peas.
  2. In a large pot, heat olive oil over medium heat.
  3. Add onion, carrot, celery, and garlic. Cook until vegetables are softened.
  4. Add black eyed peas, vegetable broth, bay leaves, dried thyme, smoked paprika, salt, and black pepper.
  5. Bring to a boil, then reduce heat and simmer for 1 hour.
  6. Remove bay leaves and discard.
  7. Use an immersion blender to partially blend the soup, leaving some whole black eyed peas for texture.
  8. Serve hot, garnished with fresh parsley.
