In a large pot, heat olive oil over medium heat. Add onion, bell pepper, celery, and garlic. Cook until vegetables are tender, about 5 minutes.

Stir in tomato paste, Cajun seasoning, dried thyme, and bay leaves. Cook for 1 minute.

Add black-eyed peas and vegetable broth. Bring to a boil, then reduce heat and simmer for 30 minutes.

Stir in okra and cook for an additional 10 minutes.

Meanwhile, cook rice according to package instructions.

Serve gumbo over rice, garnished with green onions and a dash of hot sauce.
