Black Bean Soup
Black beans are a great source of plant-based protein and are rich in fiber, iron, and folate. They have been a staple in Latin American cuisine for centuries.

Rinse and drain the black beans.

In a large pot, heat olive oil over medium heat.

Add chopped onion, minced garlic, and diced bell pepper. Sauté until vegetables are tender.

Add cumin powder, chili powder, salt, and black pepper. Stir well.

Add black beans and vegetable broth to the pot. Bring to a boil.

Reduce heat and simmer for 20-25 minutes, until the beans are soft.

Use an immersion blender or transfer a portion of the soup to a blender and blend until smooth.

Return the blended soup to the pot and stir in lime juice.

Simmer for another 5 minutes.

Serve hot, garnished with fresh cilantro.
