Black bean burgers are a popular vegetarian alternative to meat burgers and are packed with protein and fiber.

Preheat the oven to 400°F (200°C).

Peel and dice the sweet potato. Place it on a baking sheet and drizzle with 1 tablespoon of olive oil. Season with salt and pepper. Roast in the oven for 15 minutes or until tender.

In a food processor, combine the black beans, onion, garlic, breadcrumbs, cumin, chili powder, salt, and pepper. Pulse until well combined.

Transfer the mixture to a bowl and add the roasted sweet potato. Mash the sweet potato and mix everything together.

Divide the mixture into 4 equal portions and shape them into patties.

Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the patties for 4-5 minutes on each side, until golden brown.

Toast the burger buns.

Assemble the burgers by placing a patty on the bottom half of each bun. Top with lettuce, tomato, and avocado slices. Cover with the top half of the bun.

Serve the black bean burgers with sweet potato immediately.
