Rinse and drain the black beans. Peel and grate the potato. Finely chop the onion and garlic cloves.

In a large bowl, mash the black beans with a fork. Add grated potato, chopped onion, minced garlic, breadcrumbs, ground cumin, paprika, salt, and black pepper. Mix well.

Shape the mixture into patties. Place the patties on a baking sheet and refrigerate for 10 minutes.

Heat olive oil in a pan over medium heat. Cook the patties for 4-5 minutes on each side until golden brown.

Toast the burger buns. Place a lettuce leaf on the bottom bun, followed by a veggie patty. Top with sliced tomato and pickles. Cover with the top bun.
