  1. Rinse the barley under cold water.
  2. Heat olive oil in a large saucepan and sauté the onion and garlic until translucent.
  3. Add the barley and stir for a minute.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce heat, cover, and simmer for 25 minutes or until the barley is tender.
  6. In a separate pan, sauté the carrot and peas until tender.
  7. Once the barley is cooked, remove from heat and let it rest for 5 minutes.
  8. Fluff the barley with a fork and stir in the sautéed carrot, peas, salt, and black pepper.
  9. Garnish with parsley before serving.
