Barley Pilaf
Barley is one of the oldest cultivated grains and has been used as a food source for thousands of years.
This is vegan recipe. Dish can be prepared in 45 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 10.

Rinse the barley under cold water.

Heat olive oil in a large saucepan and sauté the onion and garlic until translucent.

Add the barley and stir for a minute.

Pour in the vegetable broth and bring to a boil.

Reduce heat, cover, and simmer for 25 minutes or until the barley is tender.

In a separate pan, sauté the carrot and peas until tender.

Once the barley is cooked, remove from heat and let it rest for 5 minutes.

Fluff the barley with a fork and stir in the sautéed carrot, peas, salt, and black pepper.

Garnish with parsley before serving.
