Barbeque Seitan and Black Bean Burritos
Seitan, also known as wheat meat or wheat gluten, is a popular meat substitute in vegetarian and vegan cooking. It is made from gluten, the protein found in wheat, and has a chewy texture similar to meat.

Heat olive oil in a pan over medium heat. Add diced onion, bell pepper, and minced garlic. Cook until softened.

Add seitan, black beans, cumin, chili powder, and salt to the pan. Cook for 5 minutes, stirring occasionally.

Pour barbeque sauce into the pan and stir to coat the mixture. Cook for another 5 minutes.

Warm the flour tortillas in a separate pan or microwave.

Assemble the burritos by placing a scoop of the seitan and black bean mixture onto each tortilla. Top with sliced avocado, a squeeze of lime juice, and a sprinkle of cilantro.
