Rinse quinoa under cold water.

In a medium saucepan, bring water to a boil and add quinoa. Reduce heat, cover, and simmer for 15 minutes or until quinoa is tender and water is absorbed.

In a blender, combine ripe bananas, coconut milk, maple syrup, vanilla extract, cinnamon, and salt. Blend until smooth.

Pour the banana mixture into the saucepan with the cooked quinoa. Stir well to combine.

Cook over medium heat for 5 minutes, stirring occasionally.

Remove from heat and let it rest for 10 minutes.

Serve the pudding in bowls and top with chopped walnuts, sliced bananas, and a sprinkle of ground cinnamon.
