  2. Wash and dry the potatoes.
  3. Rub the potatoes with olive oil, salt, and black pepper.

  5. Remove the potatoes from the oven and let them rest for 5 minutes.
  6. Cut a slit in the top of each potato and gently squeeze the ends to open.
  7. Top each potato with a spoonful of sour cream and sprinkle with chives.
