Preheat the oven to 400°F (200°C).

Wash and dry the potatoes.

Rub the potatoes with olive oil, salt, and black pepper.

Place the potatoes on a baking sheet and bake for 45-60 minutes, or until the potatoes are tender and the skins are crispy.

Remove the potatoes from the oven and let them rest for 5 minutes.

Cut a slit in the top of each potato and gently squeeze the ends to open.

Top each potato with a spoonful of sour cream and sprinkle with chives.
