Baked Lentils
Lentils are a great source of plant-based protein and are commonly used in Mediterranean and Middle Eastern cuisines.

Preheat the oven to 375°F (190°C).

Rinse the lentils under cold water and drain.

In a large oven-safe pot or Dutch oven, heat olive oil over medium heat.

Add the onion, garlic, carrot, and celery. Sauté until the vegetables are tender.

Stir in the tomato paste, paprika, cumin, salt, and black pepper.

Add the lentils and vegetable broth. Stir well.

Cover the pot and transfer it to the preheated oven.

Bake for 30-40 minutes, or until the lentils are tender and the liquid is absorbed.

Remove from the oven and let it rest for 10 minutes.

Garnish with fresh parsley before serving.
