Baked Green Gluten-Free Falafel
Falafel is a popular street food in the Middle East and is often served in a pita bread with tahini sauce and salad.
This is vegan, gluten free and high protein recipe. Dish can be prepared in 55 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 12.

Preheat the oven to 375°F (190°C).

In a food processor, combine the chickpeas, parsley, cilantro, garlic cloves, cumin, coriander, baking powder, lemon juice, olive oil, salt, and black pepper. Pulse until well combined.

Add the gluten-free breadcrumbs to the mixture and pulse again until the mixture comes together.

Shape the mixture into small patties and place them on a baking sheet lined with parchment paper.

Bake for 20-25 minutes, or until the falafel is golden brown and crispy.

Remove from the oven and let them rest for 10 minutes before serving.

Serve the baked green gluten-free falafel with your favorite dipping sauce or in a pita bread with fresh vegetables.
