  1. Roast the eggplants on an open flame until the skin is charred and the flesh becomes soft. Allow them to cool.
  2. Remove the skin from the roasted eggplants and mash the flesh.
  3. Heat oil in a pan and add cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.
  4. Add chopped green chilies, garlic, and ginger to the pan. Sauté for a minute.
  5. Add chopped tomatoes and cook until they turn soft.
  6. Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
  7. Add the mashed eggplant to the pan and mix everything together.
  8. Cook for a few minutes, allowing the flavors to blend.
  9. Add garam masala and mix well.
  10. Remove from heat and garnish with chopped cilantro.
  11. Squeeze lemon juice over the dish and mix well.
  12. Rest for 10 minutes before serving.
  13. Serve hot with roti or rice.
