Heat olive oil in a large pan over medium heat.

Add the onion and garlic, and sauté until softened.

Add the eggplant, zucchini, and bell peppers to the pan, and cook until slightly browned.

Stir in the tomatoes, basil, salt, and black pepper.

Reduce the heat to low, cover the pan, and simmer for 30 minutes.

Remove from heat and let it rest for 10 minutes.

Serve hot with crusty bread or rice.
