Cut the eggplants in half lengthwise and scoop out the flesh into a bowl.

Mash the eggplant flesh with a fork or blend it in a food processor until smooth.

Add the garlic, tahini, lemon juice, olive oil, salt, and ground cumin to the bowl and mix well.
