Heat vegetable oil in a pan.

Add chopped onion and cook until translucent.

Add minced garlic, grated ginger, and chopped red chili. Stir for a minute.

Add cumin powder, coriander powder, turmeric powder, and salt. Stir well.

Pour coconut milk and bring to a simmer.

Add mint leaves and mixed vegetables. Cook for 5 minutes.

Cut tofu into cubes and add to the curry. Cook for another 5 minutes.
