Avocado sushi, also known as ‘California Roll’, was invented in the 1960s in Los Angeles by a sushi chef named Ichiro Mashita.
This is vegan and gluten free recipe. Dish can be prepared in 40 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 9.

Cook sushi rice according to package instructions.

Cut avocado, cucumber, and carrot into thin strips.

Place a sheet of nori on a bamboo mat.

Spread a layer of sushi rice on the nori, leaving a 1-inch border.

Arrange avocado, cucumber, carrot, radish sprouts, and cashew nuts on top of the rice.

Roll the sushi tightly using the bamboo mat.

Slice the sushi roll into bite-sized pieces.

Serve with soy sauce and wasabi.
