  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the flaxseed meal and water. Let it sit for 5 minutes to thicken.
  3. In a skillet, heat olive oil over medium heat. Sauté the onion and garlic until translucent.
  4. Add the spinach to the skillet and cook until wilted. Remove from heat.
  5. In the bowl with flaxseed mixture, add the cooked spinach mixture, breadcrumbs, vegan cheese, salt, and black pepper. Mix well.
  6. Shape the mixture into small balls and place them on a baking sheet lined with parchment paper.
  7. Bake for 20-25 minutes until golden brown.
  8. Remove from the oven and let the spinach balls rest for a few minutes before serving.
