Asparagus Rolls
Asparagus is a member of the lily family and is one of the first vegetables to appear in the spring.
This is vegan, gluten free and low carb recipe. Dish can be prepared in 40 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 6.

Preheat the oven to 375°F (190°C).

Trim the ends of the asparagus stalks and blanch them in boiling water for 2 minutes. Drain and set aside.

Lay out one sheet of phyllo dough and brush it with olive oil. Place another sheet on top and repeat the process until you have 4 layers of phyllo dough.

Cut the layered phyllo dough into 4 equal rectangles.

Place 4 asparagus stalks on each rectangle and season with salt, black pepper, and grated Parmesan cheese.

Roll up the phyllo dough tightly around the asparagus stalks, sealing the edges with olive oil.

Place the rolls on a baking sheet lined with parchment paper.

Bake for 15-20 minutes until the phyllo dough is golden brown and crispy.

Allow the rolls to rest for 5 minutes before serving.

Serve hot as an appetizer or side dish.
