Bring a pot of water to boil and cook the Asian noodles according to package instructions. Drain and set aside.

In a large pan, heat the sesame oil over medium heat. Add minced garlic, ginger, and sliced spring onions. Stir-fry for 2 minutes.

Add the fresh greens and cook until wilted, about 3-4 minutes.

Add the pickled greens, soy sauce, and red chili flakes. Stir-fry for another 2 minutes.

Add the cooked noodles to the pan and toss everything together until well combined.
