Preheat the oven to 200°C (400°F).

Peel and cut the parsnips and carrots into evenly sized sticks.

In a large bowl, toss the parsnips, carrots, olive oil, garlic, thyme, salt, and black pepper until well coated.

Spread the vegetables in a single layer on a baking sheet.

Roast in the preheated oven for 25-30 minutes or until they are tender and golden brown, stirring once halfway through.
