Apple Curry Soup

Heat oil in a large pot over medium heat. Add the onion and garlic, and cook until softened.

Add the curry powder and cook for another minute.

Add the apples and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes.

Remove from heat and let the soup cool slightly. Use an immersion blender to puree the soup until smooth.

Return the soup to the pot and stir in the coconut milk, lime juice, salt, and black pepper. Simmer for another 5 minutes.

Serve the soup hot, garnished with fresh cilantro.
