Wild rice is not actually rice, but rather the seed of a semi-aquatic grass native to North America.

This is vegan and gluten free recipe. Dish can be prepared in 50 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 12.

  1. Rinse the wild rice under cold water and drain.
  2. In a large saucepan, combine the wild rice, apple cider, and vegetable broth. Bring to a boil.
  3. Reduce heat to low, cover, and simmer for 30 minutes or until the rice is tender and the liquid is absorbed.
  4. Meanwhile, chop the apple, onion, and garlic.
  5. In a large skillet, heat olive oil over medium heat. Add the chopped apple, onion, and garlic. Cook for 5 minutes or until the onion is translucent.
  6. Add the cooked wild rice to the skillet and stir to combine.
  7. Stir in the dried cranberries, pecans, parsley, salt, and black pepper.
  8. Cook for an additional 5 minutes, stirring occasionally.
  9. Remove from heat and let it rest for 5 minutes.
  10. Serve hot and enjoy!
