Angel Hair Filled Roasted Eggplant
Eggplants are actually a fruit, not a vegetable, and belong to the nightshade family.
This is vegan, gluten free and high protein recipe. Dish can be prepared in 70 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 9.

Preheat the oven to 400°F (200°C). Cut the eggplant in half lengthwise and scoop out the flesh, leaving a 1/2-inch thick shell.

Chop the eggplant flesh and set aside.

Cook the angel hair pasta according to package instructions. Drain and set aside.

In a mixing bowl, combine the chopped eggplant flesh, ricotta cheese, parmesan cheese, chopped basil leaves, minced garlic cloves, olive oil, salt, and black pepper.

Stuff the eggplant shells with the mixture and place them on a baking sheet.

Roast in the preheated oven for 30-35 minutes, until the eggplant is tender and the filling is golden brown.

In the meantime, heat a small saucepan over medium heat. Add the remaining olive oil and minced garlic cloves. Cook until fragrant.

Add the cooked angel hair pasta to the saucepan and toss to coat.

Remove the stuffed eggplants from the oven and let them rest for 10 minutes.

Serve the roasted eggplants on a bed of angel hair pasta.
