Preheat the oven to 325°F (165°C) and line a baking sheet with parchment paper.

In a large bowl, combine the rolled oats, almonds, coconut flakes, pumpkin seeds, cinnamon, and salt.

In a small saucepan, heat the coconut oil, maple syrup, and vanilla extract over low heat until melted and well combined.

Pour the wet mixture over the dry ingredients and mix until everything is evenly coated.

Spread the granola mixture onto the prepared baking sheet in an even layer.
