Couscous is a staple food in Algerian cuisine and is traditionally prepared by steaming it in a special pot called a couscoussier.

In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, and sauté until fragrant.

Add diced carrots, zucchini, and bell peppers to the pot. Cook for 5 minutes, stirring occasionally.

Stir in tomato paste, cumin, coriander, paprika, salt, and black pepper. Cook for another 2 minutes.

Add vegetable stock and bring to a boil. Reduce heat and simmer for 15 minutes.

Rinse and drain chickpeas, then add them to the pot. Cook for an additional 5 minutes.

In a separate pot, prepare couscous according to package instructions.

Fluff the cooked couscous with a fork and serve it with the vegetable stew.
