  4. Add vegetable stock and bring to a boil. Reduce heat and simmer for 15 minutes.
  5. Rinse and drain chickpeas, then add them to the pot. Cook for an additional 5 minutes.
  6. In a separate pot, prepare couscous according to package instructions.
  7. Fluff the cooked couscous with a fork and serve it with the vegetable stew.
  8. Garnish with fresh parsley.
