  1. Preheat the oven to 200°C (400°F).
  2. Place the red bell peppers and eggplant on a baking sheet and roast for 30 minutes, or until the skin is charred.
  3. Remove the roasted vegetables from the oven and let them cool for 10 minutes.
  4. Peel off the skin of the bell peppers and eggplant, and remove the seeds.
  5. In a blender or food processor, combine the roasted vegetables, garlic cloves, olive oil, white vinegar, salt, and sugar. Blend until smooth.
  6. Transfer the mixture to a saucepan and cook over low heat for 15 minutes, stirring occasionally.
  7. Remove from heat and let it rest for 30 minutes.
  8. Serve ajvar as a side dish or condiment.
