Ajvar

Ajvar is a traditional Balkan dish, popular in countries such as Serbia, Macedonia, and Bosnia and Herzegovina. It is often made in large quantities during the summer when red bell peppers and eggplants are in season.
This is vegan, gluten free and low carb recipe. Dish can be prepared in 60 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 6.

Preheat the oven to 200°C (400°F).

Place the red bell peppers and eggplant on a baking sheet and roast for 30-40 minutes, until the skin is charred and blistered.

Remove the vegetables from the oven and let them cool slightly.

Peel off the skin from the peppers and eggplant, and remove the seeds.

Place the roasted peppers, eggplant, garlic cloves, olive oil, white vinegar, and salt in a blender or food processor.

Blend until smooth.

Transfer the ajvar to a jar or container and refrigerate for at least 1 hour before serving.

Serve as a side dish or condiment with bread, grilled meats, or vegetables.
