Rinse the lentils under cold water.

In a large pot, bring water to a boil and add the lentils. Cook for 20 minutes or until tender.

While the lentils are cooking, heat olive oil in a pan and sauté the chopped onion and minced garlic until golden brown.

Add the cooked lentils to the pan with the onions and garlic. Stir in the cumin, paprika, and salt.

Cook for an additional 5 minutes, stirring occasionally.

Remove from heat and stir in the lemon juice.

Let the dish rest for 5 minutes before serving.

Garnish with fresh parsley and serve hot.
