Sweet and Sour Carrots
Sweet and sour carrots are a popular dish in Chinese cuisine and are often served as a side dish with rice or noodles.

Peel and slice the carrots into thin rounds.

Chop the onion and bell pepper into small pieces.

In a bowl, mix together tomato ketchup, rice vinegar, sugar, soy sauce, cornstarch, and water to make the sweet and sour sauce.

Heat vegetable oil in a pan and add the carrots, onion, and bell pepper. Stir-fry for 5 minutes.

Add the sweet and sour sauce to the pan and cook for another 5 minutes until the sauce thickens.

Add pineapple chunks and cook for 2 more minutes.

Season with salt to taste.
