Add the soaked black beans, Scotch bonnet pepper, thyme, allspice, and bay leaf to the pot.

Pour in the coconut milk and enough water to cover the beans.

Bring to a boil, then reduce heat and simmer for about 1 hour or until the beans are tender.

Stir in lime juice and cilantro before serving.
