Heat oil in a pan and add mustard seeds. Once they crackle, add curry leaves.

Add chopped onions and cook until golden brown.

Add ginger-garlic paste and sauté for a minute.

Add chopped tomatoes and cook until they turn mushy.

Add turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Mix well.

Add chopped potatoes and mix until they are coated with the masala.

Add water, cover the pan, and cook until the potatoes are tender.

Add garam masala and mix well.
