Preheat the oven to 400°F (200°C).

Peel and cut the yams into 1-inch cubes.

In a large bowl, toss the yams with olive oil, pomegranate molasses, ground cumin, ground cinnamon, salt, and black pepper until well coated.

Spread the yams in a single layer on a baking sheet.

Roast in the preheated oven for 35-40 minutes, or until the yams are tender and golden brown, stirring once halfway through.

Remove from the oven and let them rest for 5 minutes.

Transfer the roasted yams to a serving dish and garnish with pomegranate seeds and fresh mint leaves.
