Preheat the oven to 375°F (190°C).

In a large bowl, mix together spinach, carrot, red bell pepper, onion, garlic, soy sauce, lime juice, sesame oil, salt, and black pepper.

Place a spring roll wrapper on a clean surface. Spoon about 2 tablespoons of the spinach mixture onto the center of the wrapper.

Fold the sides of the wrapper over the filling, then roll it up tightly.

Repeat with the remaining wrappers and filling.

Place the spinach cups on a baking sheet lined with parchment paper.

Bake for 10 minutes, or until the wrappers are golden and crispy.
