Zucchini and Basil Soup

Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, and cook until softened.

Add sliced zucchini to the pot and cook for 5 minutes.

Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 15 minutes.

Remove from heat and let the soup cool slightly. Use a blender to puree the soup until smooth.

Return the soup to the pot and stir in chopped basil leaves. Season with salt and black pepper.

Simmer for another 5 minutes.

Serve hot and garnish with additional basil leaves if desired.
