In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery. Cook until vegetables are tender.

Add garlic, ground cumin, and paprika. Stir and cook for another minute.

Add lentils, vegetable broth, tomato paste, bay leaves, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 30 minutes, or until lentils are tender.

Remove bay leaves. Serve hot, garnished with fresh parsley.
