Preheat the oven to 375°F (190°C).

In a large bowl, crumble the tofu and mix in chickpea flour, nutritional yeast, turmeric, salt, black pepper, and paprika.

In a skillet, heat olive oil and sauté spinach, bell pepper, red onion, tomato, and garlic until softened.

Add the sautéed vegetables to the tofu mixture and mix well.

Transfer the mixture to a greased casserole dish and bake for 30-35 minutes, or until the top is golden brown.

Remove from the oven and let it rest for 10 minutes.

Garnish with fresh parsley before serving.
