Smashed potatoes are believed to have originated in France and are also known as ‘pommes de terre écrasées’ in French.

Preheat the oven to 220°C (425°F).

In a large pot, boil the potatoes until fork-tender, approximately 15-20 minutes.

Drain the potatoes and let them cool slightly.

On a baking sheet, drizzle olive oil and place the boiled potatoes.

Use a fork or potato masher to gently smash each potato until it's flattened but still holds together.

Drizzle olive oil over the smashed potatoes.

Sprinkle garlic powder, dried thyme, salt, and black pepper evenly over the potatoes.

Bake in the preheated oven for 15-20 minutes or until golden and crispy.

Remove from the oven and let them rest for 5 minutes.

Garnish with fresh parsley before serving.
