Heat olive oil in a pan over medium heat. Add sliced mushrooms and sauté until golden brown. In a large bowl, combine baby spinach, cherry tomatoes, and sliced red onion. Add the sautéed mushrooms to the bowl. In a small bowl, whisk together balsamic vinegar, olive oil, salt, and black pepper. Drizzle the dressing over the salad and toss to combine. Let the salad rest for 5 minutes. Serve the warm mushroom salad topped with grated Parmesan cheese.
