Heat olive oil in a large pot over medium heat. Add onion and garlic, and sauté until softened.

Add tomatoes, vegetable broth, basil, salt, and black pepper to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes.

Meanwhile, prepare the spinach coulis by blending spinach, lemon juice, and a pinch of salt until smooth.

Remove the soup from heat and let it cool slightly. Then, using an immersion blender, blend the soup until smooth and creamy.

Serve the silky tomato soup in bowls and garnish with a swirl of spinach coulis and croutons.
