Tagine is a traditional Moroccan dish named after the clay pot in which it is cooked. The conical shape of the tagine helps to circulate the steam and flavors, resulting in a delicious and aromatic meal.

Heat olive oil in a tagine or large pot over medium heat.

Add the onion and garlic, sauté until softened.

Add the carrots, potatoes, zucchini, chickpeas, dried apricots, dried prunes, cumin, coriander, cinnamon, and turmeric. Stir well to combine.

Pour in the vegetable broth and lemon juice. Season with salt and black pepper.

Cover the tagine or pot and simmer for about 45 minutes, until the vegetables are tender.

Meanwhile, prepare the couscous according to package instructions.

Serve the tagine over the couscous, garnished with fresh cilantro.
