Chickpeas, also known as garbanzo beans, are one of the oldest cultivated crops and have been consumed for thousands of years. They are a great source of plant-based protein and fiber.

Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, sauté until softened.

Add paprika, cumin, salt, and black pepper. Stir well.

Pour in the vegetable broth and canned tomatoes. Bring to a boil.

Reduce heat to low and add the chickpeas. Simmer for 30 minutes.

Remove from heat and let it rest for 10 minutes.

Stir in freshly chopped parsley and lemon juice.
