Preheat the oven to 220°C (425°F).

Wash and peel the potatoes, then cut them into thin slices.

In a large bowl, toss the potato slices with olive oil, salt, and Italian seasoning until evenly coated.

Bake in the preheated oven for 20 minutes, or until the chips are golden and crispy.
