In a saucepan, heat almond milk over medium heat. Add agar agar powder and sugar, and stir until dissolved.

Remove from heat and stir in vanilla extract.

In a separate saucepan, bring water to a boil. Add loquat seeds and cook for 5 minutes. Drain and set aside.

Pour the almond milk mixture into individual molds or a large dish.

Sprinkle the cooked loquat seeds evenly over the almond milk mixture.

Allow the mixture to cool at room temperature for 10 minutes, then refrigerate for at least 2 hours or until set.

Once set, remove from the molds or cut into desired shapes.

Serve chilled and enjoy!
