Zucchini in a Pot
Zucchini is actually a fruit, botanically classified as a type of summer squash.
This is vegan, gluten free and low carb recipe. Dish can be prepared in 45 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 10.

Preheat the oven to 180°C (350°F).

Slice the zucchini into rounds and set aside.

In a pot, sauté the onion and garlic in olive oil until translucent.

Add the tomato sauce, basil, oregano, salt, and pepper to the pot and simmer for 5 minutes.

Layer half of the zucchini rounds in a baking dish, then pour half of the tomato sauce mixture over the zucchini.

Repeat with the remaining zucchini and tomato sauce mixture.

Top with mozzarella cheese.

Bake in the preheated oven for 25 minutes or until the zucchini is tender and the cheese is melted and golden.

Let it rest for 5 minutes before serving.
