Rinse the rice and beans separately.

In a large pot, heat the coconut milk and water over medium heat.

Add the rice, beans, onion, garlic, thyme, Scotch bonnet pepper, salt, and black pepper to the pot.

Bring the mixture to a boil, then reduce the heat to low and cover the pot.

Simmer for 20-25 minutes, or until the rice and beans are tender.

Remove the pot from the heat and let it rest for 10 minutes.

Fluff the rice with a fork and remove the Scotch bonnet pepper.
