Jacket Samosas
Samosas are believed to have originated in the Middle East and were introduced to the Indian subcontinent by traders during the medieval period.
This is vegan recipe. Dish can be prepared in 60 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 13.

Boil the potatoes until tender, then peel and mash them.

Heat oil in a pan and sauté onions, green chili, ginger, and garlic until golden brown.

Add peas, turmeric powder, cumin powder, coriander powder, garam masala, and salt. Cook for a few minutes.

Add the mashed potatoes to the pan and mix well. Cook for another 5 minutes.

Remove from heat and let the filling cool.

Preheat the oven to 180°C (350°F).

Cut the phyllo pastry sheets into squares.

Take one square sheet, brush it with oil, and place another sheet on top. Repeat the process with 3-4 sheets.

Place a spoonful of the potato filling in the center of the stacked sheets.

Fold the sheets diagonally to form a triangle and seal the edges.

Repeat the process for the remaining sheets and filling.

Place the samosas on a baking tray and brush them with oil.

Bake in the preheated oven for 15-20 minutes or until golden brown.

Remove from the oven and let them rest for 10 minutes before serving.
