Butternut squash is a great source of vitamin A and potassium.

Preheat the oven to 400°F (200°C).

Cut the butternut squash and apple into cubes.

Toss the squash and apple cubes with olive oil, salt, black pepper, cinnamon, and nutmeg.

Roast in the oven for 30 minutes, or until tender.

In a large pot, sauté the onion and garlic until translucent.

Add the roasted squash and apple cubes to the pot.

Pour in the vegetable broth and bring to a simmer.

Cook for 10 minutes, stirring occasionally.

Use an immersion blender to puree the soup until smooth.

Stir in the coconut milk.

Season with additional salt and pepper to taste.
