Vegetable-Stuffed Tofu

Tofu is made from soy milk and is a popular source of protein in vegetarian and vegan diets.
This is vegan, gluten free and high protein recipe. Dish can be prepared in 60 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 11.

Preheat the oven to 400°F (200°C).

Slice the tofu into 8 equal pieces and press them between paper towels to remove excess water.

In a bowl, mix the mixed vegetables, soy sauce, minced garlic, grated ginger, sesame oil, salt, and pepper.

Stuff the tofu slices with the vegetable mixture.

Place the stuffed tofu on a baking sheet and bake for 20-25 minutes until golden brown.

Meanwhile, heat a pan over medium heat and stir-fry the remaining vegetable mixture for 5-7 minutes.

Serve the stuffed tofu with the stir-fried vegetables.

Garnish with chopped green onions, cilantro, and a squeeze of lime juice.
